500g beef rib
3 dry chilis
30g fermented beans
30g rock sugar
3 pieces fermented tofu
3 tbsp dark soy sauce
0.5 tsp nutmeg (optional)
0.5 tsp salt

Introduce the dish as Guilin Mifen, a cold rice noodle from Guilin, Guangxi province.

Prepare the noodle sauce by using 500g of pig bones (pigtail) and various spices: 1 tsp Sichuan chili peppercorns, 1 tsp cloves, 1.5 tsp fennel seeds, 1 large dry ginger, 3 star anise, 2 cinnamon sticks, 5 bay leaves, 4 slices of fresh ginger, and 2 whole spring onions.

Heat 2 tbsp of vegetable oil in a medium-sized pot over medium-low heat and add all the spices to sauté them until aromatic.

Add the pig bones to the pot and pour in about 2L of cold water to cover the ingredients.

Turn the heat to high and bring to a boil, skimming off any foam that forms on the surface.

Once boiling, reduce the heat to low, cover with a lid, and cook for at least an hour.

Prepare 500g of beef rib by soaking it in cold water to clean the blood.

Add 3 dry chilis, 30g of fermented beans, 30g of rock sugar, and 3 pieces of fermented tofu to the stock after an hour, along with 3 tbsp of dark soy sauce, half tsp of nutmeg (optional), and half tsp of salt. Submerge the beef in the sauce.

Cover the pot and cook the beef on low heat for about 30 minutes.

After 30 minutes, remove the beef and add hard boiled eggs to the pot, continuing to cook on low heat for about an hour.

Once the beef is cooked, add 1-2 tbsp of vegetable oil to a pan and turn the heat to medium-low to fry the beef rib on both sides until dark and brown.

Once cooled, slice the beef into thin pieces and cut the braised hard boiled eggs in half for toppings.

Prepare peanuts by coating them with 1 tbsp of vegetable oil and microwaving on high for about 2 minutes.

Cut pickled mustard into thin strips and stir-fry with a bit of vegetable oil in a wok, adding 1 dry chili broken in half and sautéing until aromatic, then add half tsp of sugar.

Cook Guilin rice noodles by soaking them in water for at least an hour, then adding them to boiling water and cooking for about 10 minutes until soft.

Transfer the cooked noodles into cold water and rinse a couple of times to remove starch.

Assemble the dish by adding about 4 tbsp of noodle sauce, braised eggs, beef, pickled mustard, coriander, garlic, and fried peanuts.

Finish with chili sauce and stir everything together before serving.
