Peel and discard the tails of 200 grams of fresh uncooked shrimp, then chop them into small pieces, dividing each medium shrimp into about three equal parts.

Season the chopped shrimp with 1 teaspoon of salt, 0.5 teaspoon of paprika, 0.25 teaspoon of cayenne, and 0.5 teaspoon of garlic powder. Toss to combine and set aside.

In a pan over medium heat, add 1 tablespoon of avocado oil and 1 tablespoon of butter. Melt the butter.

Add half a diced medium-sized sweet onion and 1 diced green bell pepper to the pan. Sauté for about 3-4 minutes until the veggies soften, sprinkling in some salt to help release moisture.

Move the softened veggies to one half of the pan and add the seasoned shrimp to the empty half, spreading them out for maximum contact with the pan.

After 2 minutes, combine the shrimp with the veggies in the pan.

Add 1 chipotle pepper in adobo sauce (ground) to the shrimp and veggies and sauté for a couple of moments before removing from heat. Transfer the mixture to a bowl and set aside.

In a blender, combine 1 avocado, 2 tablespoons of yogurt, and 1 tablespoon of mayonnaise to make the avocado crema. Blend until smooth.

Spray some butter on a griddle and warm the corn tortillas, toasting one side before flipping them over and adding pre-shredded Oaxaca cheese on top.

Add the cooked shrimp mixture onto one half of each tortilla.

Fold the tortillas over the shrimp mixture carefully, using another utensil if needed to help with the fold.

Drizzle the avocado crema over the tacos and finish with a sprinkle of Cotija cheese on top.
