Separate 6 egg whites and yolks.
Beat egg whites until stiff.
Beat yolks until almost light in color.
Add 2 tablespoons Indian Tropotec to the whipped egg whites for better binding.
Add 6 tablespoons gluten-free flour to the mixture.
Add 6 tablespoons powdered sugar and mix everything together until smooth.
Pour the batter into a moistened baking tray.
Bake in a cold oven at 180°C (356°F) for 15 minutes.
Prepare a mixture of warm water and vanilla bourbon sugar and pour it over the baked cake to keep it soft and moist.
Whip cream until thick.
Cut the asimina fruit in half and remove the seeds, then peel it.
Squeeze a whole lemon and add fresh lemon juice to the fruit to prevent browning.
Chop the fruit and mix it with the whipped cream.
Once the cake layer has cooled, pour the batter with melted sugar, vanilla, and bourbon over it.
Add the fruit and whipped cream mixture on top of the cake.
Decorate with coconut flour and chopped pistachios.
