Coconut Fried Rice, or Nasi Goreng Kelapa, hails from Indonesia, where rice is a staple food. This dish beautifully marries the richness of coconut with the savory elements of fried rice, often enjoyed at family gatherings or festive occasions. Today, it has found its way into various cuisines globally, with many variations adapting local ingredients and flavors.

Toasted nuts add crunch and flavor, while dried coconut is often less expensive.
Crack open a coconut using a blunt object or the blunt side of a knife, and pry out the meat.
Rinse the coconut meat, cut it into tiny pieces, and add to a blender with warm water to extract coconut milk.
Blend until smooth, then strain to get the coconut milk.
In a pot, heat up some coconut oil and add pepper, grated garlic, and ginger, frying for about 30 seconds.
Add thoroughly washed rice to the pot, along with salt and any desired curry powder, and toast the rice for about 15 minutes.
Add coconut milk and chicken stock to the rice, stir well to combine, and cover to cook until rice is about 80% done.
Fluff the rice and take it off the heat, noting that it may be slightly overcooked.
In a separate pan, heat coconut oil and fry seasoned shrimp for about 1.5 minutes on each side until pink, then set aside.
Fry seasoned chicken thighs in the same pan and set aside after cooking.
Reduce oil in the pan, then add onions, garlic, and ginger, frying for about 8 minutes.
Add all veggies except the carrot (green beans and yellow bell pepper), along with chicken seasoning and curry powder, and stir well.
Cook the veggies for about 5 minutes, then add diced carrot last for crunch.
Add the fried chicken and shrimp to the veggies, stir to combine, and let simmer for 1-2 minutes while tasting and adjusting seasoning if necessary.
Reduce the rice in the pot to make space for the veggies, then pour in the stir-fried vegetables and continue to fry until well combined.
Add spring onion to the mixture and stir well to combine, then serve.
