Heat up leftover roast pork in a pan to render fat and enhance flavor.
Set aside the rendered roast pork once fragrant.
Sauté shallots and garlic for 1-2 minutes until browned.
Push shallots and garlic aside and add beaten eggs, seasoning with light soy sauce and white pepper; mix together.
Add yellow noodles to the pan and rinse under water, then drain.
Season noodles with chicken stock powder, light soy sauce, dark soy sauce, salt, white pepper, and oyster sauce; add a little water to ease frying.
Raise heat to medium-high and stir-fry until noodles are cooked but not too long to avoid releasing alkaline flavor.
Add the reserved roast pork back into the pan and mix well.
