Soak the raw cashews in water.
Mix the soaked cashews, eggs, oil, honey, and vanilla extract together until smooth.
In a separate bowl, combine the all-purpose flour, almond flour, spelt flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
Chill the dough in the refrigerator for a while.
Preheat the oven to 350°F (175°C).
Roll out the chilled dough on a floured surface to about 1/8 inch thick.
Cut circles from the dough using a cookie cutter or glass.
Place a small spoonful of filling in the center of each circle (filling not specified in the description).
