Peel 1 clove of garlic and 1 thumb-sized piece of ginger, then grate them.

Slice 50 grams of yellow onion and chop 100 grams of Pak Choy.

Heat a pot to medium heat and add 1 teaspoon (4 grams) of vegetable oil.

Add the sliced onion and chopped Pak Choy to the pot and sauté for 3-4 minutes until translucent and caramelized.

Add 180 grams of ground beef to the pot, breaking it apart with a spatula to brown it.

Sauté the beef for 90 seconds, then add the grated garlic and ginger, frying for an additional 20 seconds.

Add 30 grams of miso paste and 10 grams of gochujang to the pot, stirring until combined.

Pour in 250 grams of water and let the mixture simmer on medium-low heat for 5 minutes.

If using regular ramen noodles, add them to the pot and cook for 2-4 minutes; if using shirataki noodles, rinse them and dry fry them for 3-4 minutes before adding to the broth.

Simmer everything together for an additional 1-2 minutes, then check the seasoning and add black pepper if desired.

Transfer the ramen to a bowl and add any additional toppings like spring onions or pickled onions.
