1 small onion
1 egg
1 teaspoon of salt
1/2 teaspoon of pepper
1/4 cup of vegetable oil

Peel the potatoes and shred them in a food processor fitted with the shredder blade.

Add the onion to the food processor and shred it down in with the potatoes.

In a large bowl, mix together the potatoes, onion, egg, salt, and pepper.

Heat the oil in a skillet over medium heat.

Spoon about 1/4 cup of the mixture at a time into the skillet and spread to form small pancakes (make sure not to overcrowd the pan).

Fry the pancakes for about 5 minutes on each side, until golden brown.

Remove the pancakes from the pan and drain the excess oil by placing them on a paper towel.

Sprinkle with salt.

Serve hot with applesauce and sour cream.
