Cut 450g of beef chuck or stew meat into bite size pieces.

Dice 1/3 of an onion and cut 1 medium potato into bite size cubes.

Cut 1/2 of a medium yellow pepper into cubes, removing seeds and white parts.

Crush 1 big clove of garlic and set everything aside, placing the potatoes in cold water to prevent discoloration.

In a big pot, heat 1 1/2 tbsp butter and 2 tbsp cooking oil on medium heat, add the meat, cover, and let it cook for 7 minutes in its juices, stirring occasionally.

Once the juices have dried up, add 1 1/2 tsp salt and 3 1/2 cups of hot water, cooking for 30 minutes.

When the water has dried up, fry the meat for 4 minutes, then add the diced onion and fry for 3 minutes.

Add the minced garlic and fry for 20 seconds, then add 2 chopped tomatoes, 1/2 tsp sugar, 1/4 tsp chili flakes, 1 tsp thyme, 3/4 tsp chives, 1 tsp coriander seeds, and 1 tsp sweet paprika, along with 3/4 tsp ginger powder.

Mix well and cook for 1 minute, then add the potatoes and mix well, covering and cooking for 7 minutes, stirring occasionally.

Add 1 tsp of thickener (flour is acceptable), along with 1 cup of water, cover, and cook for 15 minutes.

Finally, add the peppers, mix well, and cook for 6 more minutes.
