Add sugar into the bowl.
Add vanilla extract into the bowl.
Add a pinch of salt into the bowl.
Add 125 grams of butter into the bowl.
Add 1 egg into the bowl.
Mix the ingredients together until combined.
Divide the dough in half and add 1 teaspoon of cocoa powder to one half, mixing until fully incorporated.
Wrap the dough in plastic wrap and chill in the fridge for 1 hour.
Roll out the dough into rectangles.
Cut the dough into three equal parts lengthwise.
Sandwich the cocoa dough between the plain dough.
Roll the sandwich together into a log shape.
Cut the edges of the log to create a perfect shape.
Wrap the log in plastic wrap and freeze for 30 minutes.
After 30 minutes, slice the log into cookies.
Place the cookies on a baking sheet.
Bake in the oven for 10-12 minutes.
