Weigh 3 whole eggs and measure out the same amount in flour, which is 145 grams.
Sift the flour and set it aside.
Add 1 more egg to the 3 eggs for a total of 4 eggs, and weigh that amount for sugar.
Grate 1 tablespoon of lemon zest.
Incorporate 4 eggs and 1 tablespoon of lemon zest in a bowl.
Slowly add sugar while mixing for about 10 minutes on medium until thick.
Gradually add flour 2 to 3 tablespoons at a time, mixing until smooth.
Prepare baking trays with baking spray or butter.
Place 1 level teaspoon of batter onto the trays, flattening them to avoid mounds.
Sprinkle anise seeds on top as desired.
Bake in a preheated 325°F (163°C) oven for 7 to 8 minutes until edges are brown.
Remove from the oven and quickly shape the cookies using glasses for an arch shape.
Let them sit in the glasses for about 45 seconds to 1 minute to hold the shape.
