Eru
Cultural Context
Eru, a traditional dish from Cameroon, is cherished for its rich flavors and nutritional value. Made primarily from eru leaves, it reflects the culinary heritage of the Bakweri people. This dish is often enjoyed during communal gatherings and celebrations, showcasing the importance of sharing meals in Cameroonian culture. Today, Eru has gained popularity beyond its origin, with variations appearing in various African cuisines.
Add frozen spinach to pot.
Use stock from meat to boil spinach and Eru.
Soak 2 Ziploc bags of dry Eru for 2 hours to soften.
Add Eru in portions to avoid overshadowing spinach.
Add whole and blended habanero pepper.
Add ground and whole crayfish.
Add salt and Magi crevet.
Add palm oil and stir to combine.
Cover and cook for about 10 minutes to allow oil to cook and water to dry.
Taste and adjust salt and Magi as needed.
Add in cow skin and beef, stir to combine.
