Separate 10 egg whites into a mixing bowl, emphasizing that the egg whites should be at room temperature for easier whipping.
Add a pinch of salt to the egg whites and beat until frothy.
Gradually add sugar while continuing to beat the egg whites until stiff peaks form, which takes about 3-4 minutes with a stand mixer.
Once the egg whites are at the desired consistency, add the vanilla extract and mix for another 30 seconds.
Transfer the beaten egg whites to a separate bowl.
Sift the cake flour over the egg whites gradually, in three additions, to avoid deflating the mixture.
Gently fold the flour into the egg whites using a spatula, being careful not to lose the volume of the egg whites.
Prepare a tube pan without greasing or flouring it, as the cake needs to cling to the sides while baking.
Pour the batter into the prepared tube pan and smooth the top with a spatula.
Tap the pan on the counter to remove any air bubbles.
Bake in a preheated oven at 150°C (approximately 302°F) for about 45 minutes, until the cake is golden brown.
Once baked, immediately invert the pan onto a plate to cool for about an hour at room temperature without removing the cake from the pan.
After cooling, run a knife around the edges to loosen the cake from the pan.
Release the pan and turn the cake out onto a serving plate.
Slice the cake and serve with fresh raspberries and blackberries as garnish.
