Add 2 cups of coconut milk to the crockpot.
Use green curry paste from a variety pack, noting it comes in different colors.
Add about 6 cloves of garlic directly into the crockpot.
Add 2 pieces of galangal to the crockpot.
Optionally, add whole pieces of ginger for flavor.
Add about 1.5 pounds of chicken breast, flattening them for even cooking.
Prep vegetables by julienning carrots and cutting them into manageable pieces.
Add the carrots, onions, and frozen bell peppers to the crockpot.
Cook on low for 4 to 5 hours.
Remove the chicken breast and galangal pieces after cooking.
Remove the lemongrass stalk and kaffir lime leaves from the mixture.
Add about 1 tablespoon of fish sauce to the sauce and mix well.
Taste the sauce to ensure the flavor is balanced.
Add a handful of whole cashews to the dish.
Optionally, add 2 tablespoons of dark brown sugar or 1 tablespoon of nut butter for sweetness.
Consider adding bamboo shoots or seasonal vegetables like spinach, cabbage, broccoli, green beans, or zucchini.
Tear the cooked chicken breast into pieces instead of chopping for better sauce retention.
Serve the curry over brown rice.
Finish with a squeeze of lime juice and garnish with cilantro, green onions, and tomatoes.
