Thai Curry Soup

1 tsp Olive Oil
500g - Fresh Prawns (Shrimp)
1 inch Fresh Ginger, Peeled & Minced
3 - Garlic Cloves, Peeled & Minced
2 inch piece - Lemongrass, Grated
1 Tbsp - Sugar
1 Tbsp - Fish Sauce
1 tsp - Curry Powder
1 tsp - Ground Coriander
1 1/2 Tbsp - Chilli Paste), Optional
2 Cups - Vegetable or Chicken Stock
400ml - Coconut Milk
Zest of 1 Lime
Salt to taste

Heat olive oil in a pot.

Add minced ginger and garlic, sauté until fragrant.

Stir in grated lemongrass, sugar, fish sauce, curry powder, and ground coriander.

Add the prawns and cook until they turn pink.

Pour in the vegetable or chicken stock and coconut milk, bring to a simmer.

Add the lime zest and optional chilli paste, stir well.

Season with salt to taste and serve over steamed rice.
