Arrive at the street food stall called Metum Mut, known for fried pork and sundried pork.
Use kitchen shears to chop off pieces of sundried pork from where it's hanging.
Order two pieces of sundried pork and one bag of fermented soured pork.
The pork is chopped into bite-sized pieces and prepared for frying.
Fry the pork in hot oil, adding the fermented soured pork at the same time.
Squeeze out the extra juices from the fermented pork before adding it to the oil.
Add a large amount of garlic to the frying pork.
Once the garlic hits the oil, the aroma intensifies.
Add a handful of chilies towards the end of frying to prevent them from burning.
Once fried, the pork is served on top of rice in a box, creating a mountain of pork, garlic, and chilies.
Sprinkle more fresh chilies on top for color.
Taste the pork and describe the flavors, noting the sourness from the fermented pork and the garlic aroma.
Combine the fried pork with sticky rice for a balanced flavor.
Try the fried pork with a fermented fish sauce dip called n Bala, adding more chilies for intensity.
