Sweet Potato Thai Curry

Homemade curry paste can be healthier and yellow curry paste is often less expensive.
Remove the stalks from Kashmiri red chillies and snip them into a couple of pieces.
Slice a generous 2 inch piece of lemon grass roughly, keeping a little aside for later use.
Add a knob of galangal to the mixer grinder.
Add a couple of kaffir lime leaves to the mixer grinder.
Add a couple of stems of coriander, including the root, to the mixer grinder after washing it nicely.
Add a couple of shallots or red onions to the mixer grinder.
Add a couple of cloves of garlic to the mixer grinder.
Add a couple of bird's eye chillies to the mixer grinder for spice.
Add a couple of leaves of sweet basil and hot basil (Thai basil) to the mixer grinder.
Optionally, add a couple of leaves of Thai coriander and a tiny knob of krachai to the mixer grinder.
Cover and grind all the ingredients into a fine and smooth paste for the Thai curry paste.
Add the Thai curry paste into a pan (the pan is off at this point).
Cut the sweet potato into little dices and add it to the pan with the curry paste.
Add water to the pan and boil until the sweet potato is cooked.
Add thin coconut milk to the pan.
Add a couple of thick slices of lemon grass to the pan.
Add a couple of basil leaves to the pan.
Snip a couple of kaffir lime leaves and add them to the pan.
Add a couple of Thai red chillies to the pan.
Add sugar or palm sugar to the pan.
Add pea aubergines to the pan (optional).
Snip the stalks off the pea aubergines and add them to the pan.
Add a thick wedge of lemon to the pan.
Add a couple of slices of galangal to the pan.
Add salt as required to the pan.
Wash and scrub the sweet potato, then cut it into thick roundels and add to the pan.
Add a cupful of water to the pan and turn the flame on.
Give the mixture a quick stir to ensure everything gets mixed and starts bubbling.
Cook on medium flame for at least 15 minutes until the sweet potatoes are done.
After 15 minutes, check if the sweet potato is cooked.
Add coconut cream to the pan and stir.
Cook on high flame for 30 seconds and then turn off the flame.
