Remove the stalks from Kashmiri red chillies and snip them into a couple of pieces.

Slice a generous 2 inch piece of lemon grass roughly, keeping a little aside for later use.

Add a knob of galangal to the mixer grinder.

Add a couple of kaffir lime leaves to the mixer grinder.

Add a couple of stems of coriander, including the root, to the mixer grinder after washing it nicely.

Add a couple of shallots or red onions to the mixer grinder.

Add a couple of cloves of garlic to the mixer grinder.

Add a couple of bird's eye chillies to the mixer grinder for spice.
