Cut Spanish onion into rings and sauté in olive oil for 2-3 minutes until softened.

Add 500 g of lean beef cubes to the onion and stir to brown the meat.

Once browned, transfer the beef and onion mixture to a casserole dish.

In the same pan, add 425 g can of Australian tomatoes and 1 tablespoon of tomato paste, and simmer to reduce.

Chop red and yellow bell peppers and add them to the tomato mixture.

Add 2 tablespoons of granulated paprika and mix well.

Pour in 1 cup of chicken stock and reduce the mixture until it's about 2/3 of its original volume.

Add the browned beef back into the sauce and mix well.

Transfer the mixture to the casserole dish, cover, and bake in the oven at 120°C for about 2 hours.

While the casserole is cooking, boil some rice and add currants and pistachio nuts to it.

After 2 hours, drain canned white beans and stir them into the casserole to warm through before serving.
