Make the fajita seasoning by combining 1/2 tablespoon chili powder, 1/2 tablespoon ground cumin, 1 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon dried oregano, 1/2 teaspoon kosher salt, and 1/4 teaspoon ground black pepper in a bowl; stir to combine and set aside.

Place 1 1/2 pounds of peeled and deveined shrimp in a large mixing bowl; drizzle with 2 tablespoons of olive oil and juice from 1 lime (about 2 tablespoons).

Add the fajita seasoning to the shrimp and stir to fully coat; set aside to marinate for about 10 to 15 minutes.

Peel, half, and slice 1 medium yellow onion into thin strips; deseed and slice 2 bell peppers.

Heat a large pan over medium heat and add a few tablespoons of olive oil; toss in the sliced onion and bell peppers and sauté for about 4 to 5 minutes until softened and starting to caramelize.

Remove the sautéed veggies to a bowl or plate; if the pan feels dry, add a splash more oil, then add the marinated shrimp to the same pan.

Cook the shrimp on one side for about 2 to 3 minutes, then flip and cook the other side for another 2 to 3 minutes until they turn pink and opaque; alternatively, stir them around for 5 to 6 minutes until fully cooked through.

Add the sautéed veggies back to the pan with the shrimp; stir everything together, allowing any remaining liquid to flavor the veggies.

Squeeze extra lime juice on top before serving; serve the shrimp and veggies in tortillas with sliced avocado or guacamole, and top with freshly chopped cilantro.
