Add steel-cut oats, non-dairy milk, water, and a pinch of salt to the Instant Pot.
Mix the ingredients together with a spoon and plop it into the base of the Instant Pot.
Close the lid and ensure the valve is set to sealing position.
Select manual high pressure and set the timer for 4 minutes.
Once the timer goes off, cancel the cooking immediately to prevent burning.
Allow the pressure to naturally release for about 20 minutes.
After 20 minutes, release any remaining pressure and open the lid.
Stir the oatmeal to combine, as it may be thicker on the bottom than the top.
For the chunky monkey oatmeal, add banana slices, chopped walnuts, and chocolate chips on top of the oatmeal.
For strawberry banana oatmeal, add strawberries, banana, and cinnamon to the oatmeal.
For chocolate raspberry oatmeal, mix in 1 tablespoon of cacao powder and 1 to 3 teaspoons of maple syrup into the oatmeal before serving, then top with raspberries.
