Spicy Plum Sauce Pork/ romanian rice PART 1

Heat 1 tablespoon of canola oil in a pan.

Chop 1/2 of a sweet onion and add it to the pan to soften for a few minutes.

Add 1/4 teaspoon each of allspice, cloves, ginger, and cinnamon to the softened onions and stir.

Chop about 1 pound of plums, keeping the skin on, and add to the pan.

Grate 1 tablespoon of fresh orange rind and add it to the plums in the pan.

Juice a Mineola orange to get about 3/4 cup of fresh orange juice and add it to the pan.

Add 1/4 cup of brown sugar to the mixture in the pan and stir well.

Cook the mixture for approximately 15-20 minutes until it thickens and the fruit softens.

Use an immersion blender to puree the sauce in the pan until smooth, being careful as it is hot.

Pour the sauce into two containers, one for basting the pork and one for serving later.
