Saute the green garlic and the spinach.

Blend the spinach and garlic mixture and strain it through a sieve.

Add the gelatin to the strained mixture and mix well.

Pour the mixture into a mold or plate and cool for 2 hours to set.

Boil the potatoes and mash them with a little bit of milk, salt, pepper, and garlic powder.

Form the mashed potatoes into patties, add mozzarella on top, and bake them for 10 minutes at 180ºC (356ºF).

Poach the eggs in water mixed with a little bit of vinegar and beetroot powder.

Garnish with greens or sprouts.
