Preheat the oven to 350°F (175°C).
In a bowl, cream together butter and sugar until light and fluffy.
Add egg yolks and vanilla extract, mixing until well combined.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
Chill the dough in the refrigerator for 30 minutes.
Roll out the dough on a lightly floured surface to about 1/4 inch thick.
Cut out shapes using cookie cutters and place on a baking sheet lined with parchment paper.
Use a small round cutter to create a hole in the center of half the cookies.
Bake for 10-12 minutes, until lightly golden.
Remove from the oven and let cool on a wire rack.
Spread jam on the whole cookies and top with the cookies that have holes.
Dust with powdered sugar before serving.
