4 green onions
3 garlic cloves
2 scotch bonnet peppers (divided)
1 can of tomatoes 14 oz
3 Tbsp vegetable oil
1 Kg stewing beef in chunks
1 red onion chopped
2 Tbsp tomato paste
4 cups beef or chicken broth
2/3 cups creamy peanut butter
3 potatoes peeled and cut in chunks
3 carrots peeled and cut in chunks
1 red bell pepper cut in 8ths

In a blender add 4 green onions, 3 garlic cloves, one scotch bonnet pepper and the can of tomatoes. Blend and set aside.

In a pot heat 3 Tbsp vegetable oil over medium heat. Sear the meat in batches for about 3-4 mins and set aside.

Add 1 chopped red onion on the same pot where you seared the beef and cook for 4 mins.

Add 2 Tbsp tomato paste and mix for 30 seconds.

Add the blended ingredients and mix until combined.

Add 4 cups of beef broth and the seared beef, mix together then add 2/3 cups of creamy peanut butter. Mix until fully combined and simmer for 15 mins.

Add 3 potatoes in chunks, 3 carrots in chunks, 1 red bell pepper in eighths and the other scotch bonnet pepper. Mix well, cover and simmer for 30 minutes.

Uncover and simmer for 30 more minutes.

Season with salt and pepper to taste and enjoy.
