The dish is typically served with amrac chutney, made from ripe mangoes, which adds a sweet and tangy contrast. This pairing showcases the vibrant flavors of Trinidadian cuisine, reflecting its diverse cultural influences. Today, phulorie can be found at street vendors and is a staple at parties and celebrations across the islands.

Add flour, split peas powder, yeast, sugar, and salt to a bowl and mix to incorporate everything.
Make a well in the middle and add water a little at a time, mixing properly to avoid lumps.
Once you have a stiff batter, cover and let it rest for about 10 minutes.
Wash and chop about 2 cups of bilimbi and add it to a saucepan.
Blend all the ingredients for the seasonings and pour over the bilimbi.
Add salt and sugar to taste and boil until tender, mashing a few to thicken the sauce.
Heat oil in a pot for deep frying on medium heat.
Uncover the batter and mix well.
Dip fingers in water, pick up some batter, and drop it into the hot oil carefully.
Use a slotted spoon to roll them around for even cooking.
Remove from oil and drain on paper towels or brown paper.
