Cut 1.8 kg/2 pounds whole chicken.

Add the chicken to a bowl.

Add 3 tbsp Worcestershire sauce, 2 tbsp cumin, 1 tsp thyme, 1 tsp oregano, and 1/2 tsp black pepper to the chicken and stir.

In a dutch oven, melt 2 tbsp coconut milk and 2 tsp sugar.

Add the garlic, onion, bell pepper, 1 bay leaf, 2 tbsp red recado, 3 tbsp soy sauce, 1 tsp salt, and 2 tbsp white vinegar; stir.

Add water to cover and cook for 40 minutes.

In a saucepan, add the onion, garlic, 16.5 dl/6 cups water, 0.45 kg/1 pound kidney beans, 1/2 tsp thyme, 1 tsp salt, black pepper to taste, and 2.35 dl/1 cup coconut milk.

Bring to a boil, then add 900 grams/2 pounds rice and simmer until the water is absorbed.

To make the red recado, add 2 tsp ground annatto seeds, 2.5 tsp lime juice, 2.5 tsp orange juice, 2 tsp chopped garlic cloves, 1 tsp allspice, 1 tsp oregano, 1 tsp salt, 1/2 tsp cumin, 1/2 tsp black pepper, and 1/10 tsp ground cloves to a bowl and stir; put in the fridge for 5 days.
