Wash chicken and cut into pieces.

Season chicken with salt, all-purpose seasoning, browning, and freshly blended green seasoning.

Mix all the ingredients together and add chopped garlic and pimento peppers.

Cover and allow to marinate for at least 30 minutes, preferably overnight.

Put a pot over high heat and add cooking oil, allowing it to get hot.

Add each piece of chicken to the pot and fry on each side until deep golden brown.

Remove chicken from the frying pan but keep the remaining marinade in the pan.

Reduce the cooking oil in the pan, leaving about 2 to 3 tablespoons.

Add chopped garlic, onions, pimento peppers, scallions, thyme, sweet peppers, tomatoes, one whole scotch bonnet pepper, and carrots to the pan.

Return the chicken to the pot.

Add ketchup and the fresh ingredients to the pot.

Add 3 cups of water to the remaining marinade and pour it over the chicken.

Cover and allow to simmer, stirring occasionally to ensure the seasoning and vegetables are covered in sauce.

Cover and cook on low heat for about 20 to 25 minutes until the sauce is thick and the meat is juicy and tender.
