Start by washing the chicken in lemon juice and cutting it into pieces.

In a glass bowl, add the chicken and season it with garlic, ginger, scallion, carrot, Irish potato, onion, sweet pepper, Scotch bonnet pepper, and a little ketchup.

Add 1 teaspoon of all-purpose seasoning, 1 teaspoon of chicken seasoning, 1 teaspoon of black pepper, and 2 tablespoons of paprika to the chicken.

Massage the seasoning into the chicken thoroughly, ensuring it is well coated.

Let the chicken marinate for at least 1 hour or overnight for best flavor.

In a pot, heat 1 tablespoon of vegetable oil over low heat.

Add just over 1 tablespoon of brown sugar to the oil and let it melt, stirring gently to avoid burning.

Once the sugar has melted and turned a nice brown color, add the marinated chicken to the pot, leaving the potatoes aside.

After 10 minutes, remove the lid and add the Irish potato, remaining carrot, and sweet peppers.

Add more scallion and thyme, along with the remaining tomato ketchup.

Cover the pot and let it cook for another 15 minutes until everything is tender and the gravy thickens.
