Cut up 4.5 pounds of chicken leg and thigh with back, removing most of the fat and all of the skin.

Add Starbot jerk marinade to the chicken, along with sea salt and grated ginger, and mix well to coat the chicken.

Cover the chicken and marinate in the fridge for at least 2 hours, preferably 3 hours.

Heat 1 tablespoon of olive oil in a wide pot over high heat.

Add 1.5 tablespoons of golden brown sugar to the dry pot and stir until it starts to froth and melt, being careful not to let it burn.

Once the sugar is dark amber (not black), add the marinated chicken with all the jerk marinade to the pot and stir to coat the chicken in the melted sugar.

Cover the pot and bring the chicken to a boil, allowing it to release its natural juices, for about 4 minutes.

Remove the lid and let the liquid reduce, stirring occasionally to prevent burning.

Add light beer to the pot and stir to combine, allowing the chicken to braise and infuse the flavors for a while.

Add 5 allspice berries, fresh thyme, scallions, and 1 teaspoon of homemade Caribbean green seasoning to the pot, mixing well.

Reduce the heat to medium-low and continue to braise the chicken until cooked through.
