Coconut Lime Poached Salmon

4 oz. salmon
1 tsp. lime juice
½ c. coconut cream
1 tbsp. red curry paste
1 tsp. lime zest
1 tsp. red chili

In a medium saucepan, combine coconut milk, lime juice, lime zest, garlic, ginger, salt, and black pepper. Stir well to combine.

Bring the mixture to a gentle simmer over medium heat.

Once simmering, carefully add the salmon fillets to the saucepan, skin-side down.

Cover the saucepan and poach the salmon for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

Remove the salmon from the saucepan and place on a serving platter.

Spoon some of the coconut-lime sauce over the salmon fillets.

Garnish with sliced green onions and chopped cilantro before serving.

Serve warm with rice or a fresh salad.
