3 tablespoon plain Greek Yogurt
1 tablespoon granulated Sugar
1/4 teaspoon pure Vanilla Extract

Pre-heat the oven to 350F.

In a bowl, transfer the greek yogurt. Add the sugar, egg and vanilla extract. Mix until well combined.

Using your fingers, press the center of the bread starting from the edge. The goal is to create a huge indent in the middle to hold the custard and filling.

Divide the custard mixture between the two slice bread.

Microwave the Blueberry for 1 minute, this will release the juice. You can also use it fresh. If using frozen, I recommend microwaving.

Scatter the Blueberry on the bread, and Mango on the other bread. Sprinkle with sugar.

Bake for 25 minutes or until the custard is set and the edge of the bread is crunchy.

Transfer in a serving plate. Serve as is, or cut into triangles and dust with icing sugar.
