Instructions

- 4In a large bowl, combine the sliced vegetables with garlic and ginger.
- 5In a saucepan, combine vinegar, water, sugar, and salt; heat over medium until sugar dissolves.
- 6Add mustard seeds, coriander seeds, turmeric, chili flakes, black peppercorns, and bay leaves to the saucepan; bring to a simmer.
- 7Once simmering, remove from heat and let the brine cool slightly.
- 8Pour the brine over the vegetable mixture, ensuring all vegetables are submerged.
- 9Add fresh dill and lemon juice to the mixture; stir gently to combine.
- 10Transfer the mixture to sterilized jars, sealing them tightly.
- 11Let the pickles sit at room temperature for a day before refrigerating.
- 12Refrigerate for at least 48 hours before consuming for best flavor.
