Peel and cube the pumpkin into bite-sized pieces.
Heat vegetable oil in a large skillet over medium heat until shimmering.
Add chopped onion and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and grated ginger; cook until fragrant, about 1 minute.
Add cubed pumpkin and stir to coat with oil and aromatics.
Sprinkle in cumin, coriander, turmeric, salt, and black pepper; mix well.
Add chopped scotch bonnet pepper for heat; adjust to taste.
Cover and cook for 10-15 minutes, stirring occasionally, until pumpkin is tender.
Once tender, uncover and cook for an additional 5 minutes to allow moisture to evaporate.
Remove from heat and stir in lime juice and chopped green onions.
Garnish with fresh cilantro before serving.
