Cut pumpkin into small pieces.
Add a bit of cooking oil to the pot.
Add finely chopped pimento peppers, onion, garlic, and hot peppers; sauté on low heat for about a minute.
Add pumpkin to the pot and mix well to soak up the flavors.
Season with salt, black pepper, and chopped shadow benny (cilantro).
Add sugar to balance the flavors.
Cover and cook on low heat for about 10 to 15 minutes to allow the pumpkin to sweat and release its natural liquid.
Mash the pumpkin with the back of a spoon until mushy, allowing the liquid to evaporate.
Add roasted jeera (cumin) and adjust seasoning to taste.
