1 cup chopped onions
1/2 cup chopped scotch bonnet pepper
2 cloves minced garlic
4 cups chopped pumpkin
1 teaspoon salt
1 tablespoon light brown sugar (optional)
1/4 cup green seasoning
1 teaspoon roasted jeera powder

Heat a heavy bottom pan on medium heat and add some oil.

Add meaty or fenugreek seeds and toast until dark brown.

Add chopped onions and chopped pimento peppers, sauté until tender and onions are light brown.

Add minced garlic and cook until light brown.

Add chopped pumpkin or butternut squash, salt to taste, light brown sugar (optional), and green seasoning. Mix well and allow sugar and salt to dissolve, cooking for one minute.

Cover the pot and cook until the pumpkin is very tender, checking halfway through (10-15 minutes) and letting steam drip back into the pot.

Check if the pumpkin is soft, then use the back of a spoon to smoosh the pumpkin pieces until very smooth (or leave some chunky if preferred).

Add roasted jeera powder and mix well, then taste and adjust salt accordingly.
