1 cup chickpea flour
2 cups warm water
1/4 cup olive oil
1 teaspoon red chili flakes
1 teaspoon salt

Combine chickpea flour with warm water and whisk until well mixed.

Let the mixture rest for 1 to 2 hours.

After resting, gently scoop off the foamy substance that gathered on the surface.

Heat two cast iron skillets.

Add half of the olive oil to the batter mixture along with red chili flakes and salt, then mix well.

Pour about two-thirds of the batter into the larger skillet and the remaining batter into the smaller skillet.

Add the remaining olive oil to the smaller skillet and swirl it around before adding the batter.

Transfer both skillets to the oven and cook for 35 to 40 minutes, checking for doneness with a knife.
