Cut 1.4 kg of boneless and skinless chicken thighs into small pieces.

Ensure the meat is well-chilled, ideally between 0 and +5 °C.

Mince the meat using a meat grinder disc with fine holes, ensuring the minced meat temperature does not exceed +12 °C.

If the minced meat gets too warm, cool it again before processing further.

Add 22 g of salt and 2.5 g of nitrite curing salt to the minced meat and mix thoroughly.

Marinate the minced meat in the refrigerator for 12–24 hours.

Cut 150 g of cheese into small cubes.

Add 1/2 tsp pepper, 1/3 tsp ginger, 1 tsp sugar, 1/5 tsp nutmeg, 1/2 tsp sweet paprika powder, and 3-4 cloves of garlic to the mixture.

Add 5 g of baking powder and 20 g of starch to the mixture and mix lightly.

Pour in 170 ml of ice cold water with ice and knead the mixture in a food processor until smooth and homogeneous.

Line the baking tin with a roasting bag or lightly grease it with vegetable oil.

Place a small amount of the meat mixture into the mold, then spread some cheese on top, followed by another layer of meat mixture.

Tap the mold lightly to release air and distribute the mixture evenly.

Place the meatloaf in a cold oven.

Bake at 80 °C for 30 minutes.

Increase the temperature to 120 °C and bake for another 2 hours.

Finally, increase the temperature to 200 °C and bake for another 10 minutes.

Let it rest for 5-10 minutes before slicing.
