Pempek Tanpa Ikan is a vegetarian twist on the traditional Indonesian pempek, which is usually made with fish. Originating from Palembang, this dish is celebrated for its chewy texture and savory flavors. The vegetarian version uses tapioca flour and spices, making it accessible for those avoiding fish. 1

Prepare 7 cloves of garlic and crush them until smooth.

2

Set the crushed garlic aside.

3

In a large pan, pour in 300 ml of clean water and add 250 grams of all-purpose flour.

4

Add the crushed garlic, 1 teaspoon of black pepper, 1 teaspoon of chicken bouillon powder, 1 teaspoon of salt, and 1 teaspoon of MSG into the water.

5

Stir everything until dissolved without turning on the heat yet.

6

Once dissolved, turn on the stove to medium heat.

7

Cook the mixture while stirring continuously until the texture changes and becomes firmer.

8

Once the texture has changed, turn off the heat and transfer the mixture to a large bowl to cool.

9

Once cooled, add 2 eggs to the mixture, ensuring the mixture is not hot to avoid cooking the eggs.

10

Mix until well combined.

11

Gradually add 150 grams of tapioca flour, mixing with your hands until fully incorporated.

12

Shape the dough into submarine-like forms, first rolling into a ball, then making a hollow in the center.

13

Fill the hollow with a bit of egg, then cover it back up to form the submarine shape.

14

Repeat this process until all the dough is shaped.

15

Boil the shaped dough pieces until they float to the surface, indicating they are done.

16

Remove the boiled pieces and let them drain briefly.

17

Heat oil in a pan over medium heat and fry the boiled pieces until they turn slightly brown, flipping them to ensure even cooking.

18

Prepare the dipping sauce by blending 7 cloves of garlic, 10 red chilies (adjust for spice preference), 3 tablespoons of granulated sugar, 3 tablespoons of brown sugar, and 1 tablespoon of tamarind dissolved in hot water.

19

Cook the blended sauce until it boils, then strain it to remove chili seeds.

20

Serve the fried pempek with the sauce poured over them.
