Melt butter together with 1 tbsp olive oil.

Season the chicken with salt and pepper.

Fry the chicken for 5 minutes on each side until golden brown and remove from the pan.

Add 20 pearl onions and 250 grams of brown mushrooms, fry for 5 minutes.

Sprinkle with 1 tsp sugar and 2 tsp of minced garlic, fry for 1 minute.

Add 3 carrots cut into thick pieces and 2 tbsp flour, stir until mixed.

Deglaze with a bottle of Trappist beer and 1 liter of beef or veal stock.

Place the chicken in the pot with thyme and bay leaf, let simmer for 50 minutes on low heat.

Remove the thyme, bay leaf, and chicken, let the sauce reduce by 1/3 on high heat.

Add 100 ml cream and let it cook for a while.

Add finely chopped parsley and return the chicken to the pot, pour sauce over the chicken.
