Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat.
Add chopped onion, garlic, carrot, and celery; sauté until softened, about 5-7 minutes.
Add ground beef and pork; cook until browned, breaking up the meat with a spoon, about 8-10 minutes.
Stir in canned tomatoes, tomato paste, beef broth, bay leaves, oregano, basil, salt, and black pepper; simmer for 30 minutes.
Remove bay leaves from the sauce and set aside.
In a bowl, combine ricotta cheese, egg, salt, and pepper; mix until smooth.
Spread a thin layer of meat sauce in the bottom of a baking dish.
Layer lasagna noodles over the sauce, followed by a layer of ricotta mixture, mozzarella, and more meat sauce.
Repeat layers until all ingredients are used, finishing with a layer of noodles topped with meat sauce and mozzarella cheese.
Sprinkle grated parmesan cheese on top.
Cover with foil and bake for 25 minutes.
Remove foil and bake for an additional 15-20 minutes until bubbly and golden.
Let the lasagna rest for 15 minutes before slicing and serving.
