coriander seeds

Toast coriander seeds in a dry skillet over medium heat until fragrant, about 2-3 minutes.
Toast cumin seeds in the same skillet until golden, about 2 minutes.
Add black peppercorns, cinnamon stick, cloves, and cardamom pods to the skillet; toast for another 2 minutes.
Remove spices from heat and allow to cool completely.
Grind the toasted spices into a fine powder using a spice grinder or mortar and pestle.
Combine the ground spices with turmeric powder, red chili powder, ginger powder, garlic powder, and salt in a bowl.
Add dried fenugreek leaves, mustard powder, cayenne pepper, and sugar to the mixture.
Mix well until all ingredients are evenly distributed.
