Greek yogurt provides creaminess with less fat.
Place a sifter over a medium bowl and add 1 cup of flour, 1 teaspoon of sugar, and 1/4 teaspoon of salt; sift these dry ingredients together.
Crack 3 eggs into a large bowl.
Add 2 cups of milk to the eggs.
Use a mixer to beat the eggs and milk together; a blender can also be used.
Gradually add the flour mixture to the wet ingredients and beat the batter until smooth.
Add 2 tablespoons of melted butter and mix until just blended.
Heat a crepe pan or a nonstick skillet with low edges over medium-high heat and lightly grease it with a little butter.
Pour 2 tablespoons of batter onto the pan, quickly tipping and rotating the pan to spread the batter out as thinly as possible into a round shape.
Let the crepe cook until it's ready to turn, about 2 minutes; if it moves around in the pan when you shake it, it's ready.
Flip the crepe and cook for about 30 seconds on the other side until golden brown.
Continue cooking the crepe until it's golden brown on both sides.
