Preheat the oven to 180 °C (350 °F).
Prepare a baking tin (27 × 21 × 5 cm) by greasing it if necessary.
In a mixing bowl, cream together the unsalted butter, natural cane sugar, and vanilla sugar until light and fluffy.
Add the egg yolks and mix until combined.
Stir in the milk and lemon zest.
In a separate bowl, mix the plain flour and baking powder.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
In another bowl, whip the egg whites until stiff peaks form and gently fold them into the batter.
Pour the batter into the prepared baking tin.
Halve and stone the plums, then arrange them on top of the batter.
For the crumble topping, mix together the plain flour, natural cane sugar, ground cinnamon, and unsalted butter until crumbly, then fold in the marzipan cubes.
Sprinkle the crumble topping over the plums and batter.
Bake in the preheated oven for 40-45 minutes, or until golden and a toothpick comes out clean.
Allow to cool slightly before serving.
