1 teaspoon garam masala

3 tablespoons onion paste
4 tablespoons olive oil
2 kg mutton leg cuts
1 kg potatoes
25 garlic cloves
5 tablespoons butter

Mix yogurt, papaya, salt, red chili powder, coriander powder, cumin powder, garam masala, black pepper, paprika, saffron color, ginger-garlic paste, onion paste, and olive oil in a bowl.

Wash and clean 2 kg mutton leg cuts thoroughly and apply the marinade evenly, including into the cuts.

Cover with a plastic sheet and refrigerate for 10 to 12 hours.

In a large pot, heat 3 tablespoons of olive oil.

Place the marinated mutton leg in the pot.

Wash 1 kg of potatoes with skin and set them on top of the mutton.

Add 25 garlic cloves and 5 tablespoons of butter.

Cook on high heat for 5 minutes, then cover and cook on low heat for 1 to 1.5 hours until done.

Once cooked, remove the potatoes and set them aside.

Place the mutton on a large platter, pour leftover marinade over it, and arrange roasted potatoes on the side.

Garnish with salad, chopped green chilies, and green onions.
