300ml light cooking cream
1 punnet of cherry tomatoes
1 bag of baby spinach leaves
1 packet sliced mushrooms
1 brown onion
garlic paste
garlic & herb seasoning

Finely chop the brown onion. In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook onion and sliced mushrooms, stirring, until softened, 6-8 minutes. Add garlic paste and garlic & herb seasoning and cook until fragrant (2 minutes).

Reduce the heat to medium-low then stir in light cooking cream and grated parmesan cheese (keep some for garnish). Stir occasionally and let it simmer for 5 minutes.

Meanwhile, cook the gnocchi in another frying pan. Toss until both sides are browned.

Divide creamy mushrooms and gnocchi between bowls, and serve with spinach and tomato salad.
