1 pound lo mein egg noodles
1 cup thinly sliced onions
1 cup thinly sliced bell peppers
5 cloves minced garlic
1 cup bok choy (separated white and green)
6 red chilies (cut in half and seeds removed)

Prepare the chicken by slicing 1 pound of boneless skinless chicken thighs into thin strips about one inch wide.

Marinate the chicken with 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, a pinch of salt, and about 1/8 teaspoon of white pepper. Mix well and set aside for 15 minutes.

In a mixing bowl, combine 1/4 cup of water, 1 tablespoon of light soy sauce, 1.5 tablespoons of dark mushroom soy sauce, 2 tablespoons of oyster sauce, 1 teaspoon of garlic chili sauce, 2 teaspoons of brown sugar, and 1 teaspoon of sesame oil to create the sauce. Mix well.

Cook 1 pound of lo mein egg noodles according to package instructions for 4-5 minutes, then rinse in cold water to stop the cooking process.

Heat a wok over high heat and add enough oil to coat the sides and bottom. Wait until the wok is hot before adding the oil.

Add the marinated chicken to the wok, leveling it out and letting it cook for 20-30 seconds before stirring. Cook the chicken for 4-5 minutes until done, then remove from the pan and set aside.

In the same wok, reduce the heat to medium and add more oil. Add 1 cup each of thinly sliced onions and bell peppers, cooking and stirring for 1 minute.

Add 5 cloves of minced garlic to the vegetables and cook for another 2 minutes, stirring frequently.

Add 1 cup of bok choy (separated into white and green parts) and 6 red chilies (cut in half and seeds removed) to the wok. Cook and stir for 1 minute.

Add the cooked chicken back into the wok along with the juices, then add the cooked lo mein noodles and pour the spicy sauce over everything. Stir to combine using two wooden spoons or spatulas.

Cook for another 1-2 minutes until everything is heated through and well combined. Just before serving, add a handful of chopped green onions and toss a couple more times.
