Rustic Apple Tart

1 piece puff pastry
3 apples (Granny Smith and Gala)
1 egg yolk
1/4 teaspoon salt
1 teaspoon ground cinnamon
sugar (to taste)
melted unsalted butter
lemon juice (to taste)
1/4 cup apricot jam
hot water (to thin glaze)

Thaw puff pastry and keep it refrigerated until ready to use.

Peel, core, and slice the apples to between 1/8 and 1/4 inch thickness.

In a bowl, combine sliced apples with melted unsalted butter, sugar, lemon juice, salt, and ground cinnamon.

Prepare the puff pastry by cutting halfway down the edges to create a border and dock the center with a fork.

Make an egg wash by mixing the egg yolk with a little water and brush it around the edges of the tart.

Layer the apple mixture on top of the puff pastry.

Preheat the oven to 350 degrees Fahrenheit and bake the tart for 45 minutes to 1 hour until golden.

Prepare the glaze by mixing apricot jam with hot water until smooth.
