Introduce the dish: black chickpea pasta salad, emphasizing the use of black chickpeas for color.
Gather ingredients and equipment needed for the salad.
In a small mixing bowl, add 1/3 cup of plant-based yogurt.
Add 1/3 cup of starch solution mayo to the bowl.
Pour in 3 tablespoons of pickle juice from kosher dill baby pickles.
Add 3 tablespoons of lemon juice (thawed from frozen cubes).
Mix in 2 teaspoons of Dijon mustard, 1 teaspoon of sea salt, 1/4 teaspoon of pepper, and 1 teaspoon of garlic powder.
Whisk all ingredients together until well combined and set aside.
Fill a 5-quart stock pot with water and bring it to a boil.
Add salt to the boiling water and pour in the entire box of detallini pasta, noting that only 3/4 of it will be used for the recipe.
Stir the pasta and reduce the heat slightly, cooking for 8 minutes until al dente.
Strain the pasta in the sink and let it cool for a minute, ensuring it doesn't stick together.
Once cooled enough to handle, add the pasta to a bowl and pour the dressing over it, mixing well to coat the pasta.
Add 15 ounces of cooked black chickpeas to the bowl.
Incorporate 1 cup of diced celery, 1 cup of thawed frozen peas, 1/2 cup of diced red onions, and 1 cup of diced red bell pepper into the mixture.
Fold all ingredients together gently to combine.
Add 1/3 cup of chopped fresh dill and mix again.
Taste the salad and note that the dressing may need to be doubled if using black chickpeas compared to regular chickpeas.
Plate the salad and admire its colorful presentation before tasting.
