Caprese Pasta Salad

fresh mozzarella

balsamic vinegar

Red wine vinegar offers similar acidity at a lower cost.
Fill a 5-quart pot with water and set it to boil.
Add grape tomatoes and olive oil to a 12-inch skillet and turn the heat to medium-low.
Add a pinch of salt and stir occasionally, cooking the tomatoes until they burst and release their juices.
Once the water is boiling, add a bunch of salt and the pasta, cooking until al dente according to package instructions.
Drain the pasta and rinse it with cool water to stop the cooking process.
Add the cooked pasta to the pan with the tomatoes and toss to coat.
Chop the fresh mozzarella into bite-sized pieces and add to the pasta and tomatoes.
Tear fresh basil into pieces and add to the mixture.
Drizzle balsamic vinegar on top and add black pepper to taste.
Toss everything together to combine and serve at room temperature.
