fresh mozzarella

balsamic vinegar

Bring water to a boil and add pasta.
Use a shape of pasta that is perfect for pasta salad.
Grate one clove of garlic and add to a bowl.
Add about 1/4 cup extra virgin olive oil to the bowl.
Add about a tablespoon and a half of balsamic vinegar to the bowl.
Add the juice of half a lemon to the bowl.
Add a pinch of Italian seasoning and a good pinch of salt to the bowl.
Whisk the dressing ingredients together.
Add halved or quartered colorful cherry tomatoes to the bowl.
Add fresh mozzarella to the bowl.
Add a lot of fresh basil and some fresh parsley to the bowl.
If available, add about a tablespoon of pesto to the bowl.
Stir everything together to combine.
Drain the pasta and shock it under cold water until it is just warm.
Combine the pasta with the dressing and other ingredients.
Let the pasta salad chill in the fridge for at least an hour before serving.
